Description

A hearty and delicious creamy Tuscan white bean soup that is easy to make and full of flavor.


Ingredients

Scale
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 2 cans (15 ounces each) white beans, drained and rinsed
  • 1 teaspoon Italian seasoning
  • 1 cup kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté until translucent.
  3. Stir in the minced garlic and cook for another minute.
  4. Pour in the vegetable broth and add the white beans.
  5. Bring the soup to a boil and then reduce to a simmer.
  6. Add the Italian seasoning and chopped kale, cooking until the kale is wilted.
  7. Stir in the heavy cream and let simmer for 5 more minutes.
  8. Season with salt and pepper to taste before serving.

  • This soup can be made ahead of time and stored in the refrigerator.
