Description
A hearty and delicious creamy Tuscan white bean soup that is easy to make and full of flavor.
Ingredients

- 2 tablespoons olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 cans (15 ounces each) white beans, drained and rinsed
- 1 teaspoon Italian seasoning
- 1 cup kale, chopped
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat.
- Add the diced onion and sauté until translucent.
- Stir in the minced garlic and cook for another minute.
- Pour in the vegetable broth and add the white beans.
- Bring the soup to a boil and then reduce to a simmer.
- Add the Italian seasoning and chopped kale, cooking until the kale is wilted.
- Stir in the heavy cream and let simmer for 5 more minutes.
- Season with salt and pepper to taste before serving.
Notes
- This soup can be made ahead of time and stored in the refrigerator.
- Freeze leftovers in an airtight container for up to 3 months.
