A delicious creamy vodka gnocchi that is perfect for any occasion.
Ingredients

- 1 pound gnocchi
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1/2 cup vodka
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 2 tablespoons fresh basil, chopped
Instructions
- Bring a large pot of salted water to a boil. Add the gnocchi and cook according to package instructions until they float to the top. Drain and set aside.
- In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, about 1 minute.
- Add the vodka to the skillet and let it simmer for about 2-3 minutes, allowing the alcohol to cook off.
- Reduce the heat to low and stir in the heavy cream. Cook for another 2-3 minutes.
- Mix in the grated Parmesan cheese, salt, black pepper, and red pepper flakes. Stir until smooth and creamy.
- Add the cooked gnocchi and toss to coat in the sauce.
- Remove from heat and garnish with fresh basil before serving.
Notes
- For a lighter version, substitute half-and-half for the heavy cream.
- Feel free to add spinach or other vegetables for added nutrition.
