- 1 pound chicken gizzards
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon salt
- ½ teaspoon black pepper
- oil for frying
Instructions
- Start by soaking the chicken gizzards in buttermilk for at least 1 hour, preferably overnight.
- In a separate bowl, mix together flour, garlic powder, onion powder, paprika, salt, and black pepper.
- Heat oil in a deep fryer or large pot to 375°F (190°C).
- Toss the marinated gizzards in the seasoned flour until evenly coated.
- Fry the gizzards in batches until golden brown and crispy, about 5-7 minutes.
- Remove and drain on paper towels.
- Serve warm with your favorite dipping sauce.
Notes
- For extra crispy gizzards, double coat them by dipping back into the buttermilk and then the flour again before frying.
- These bites pair well with ranch dressing or hot sauce.
