Ingredients

- 1 can chickpeas, drained and rinsed
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 red onion, thinly sliced
- 1 cup tzatziki sauce
- 4 pita breads
- Fresh parsley, for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, combine chickpeas, olive oil, paprika, garlic powder, cumin, and salt.
- Spread chickpeas evenly on a baking sheet and roast for 25-30 minutes until crispy.
- Warm the pita breads in the oven for a few minutes.
- Assemble the gyros by adding crispy chickpeas, cucumber, tomatoes, onion, and tzatziki to each pita.
- Top with fresh parsley and serve immediately.
Notes
- Chickpeas can be soaked overnight for a fresher taste.
- Feel free to add other vegetables as desired.
- Use gluten-free pita for a gluten-free option.
