Description

Delicious and healthy chickpea gyros that are crispy and full of flavor.


Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 red onion, thinly sliced
  • 1 cup tzatziki sauce
  • 4 pita breads
  • Fresh parsley, for garnish


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, combine chickpeas, olive oil, paprika, garlic powder, cumin, and salt.
  3. Spread chickpeas evenly on a baking sheet and roast for 25-30 minutes until crispy.
  4. Warm the pita breads in the oven for a few minutes.
  5. Assemble the gyros by adding crispy chickpeas, cucumber, tomatoes, onion, and tzatziki to each pita.
  6. Top with fresh parsley and serve immediately.

Notes

  • Chickpeas can be soaked overnight for a fresher taste.
  • Feel free to add other vegetables as desired.
  • Use gluten-free pita for a gluten-free option.
