Crispy Hungarian Potato Cheese Sticks are a delightful snack made from mashed potatoes, cheese, and spices, coated in breadcrumbs and fried to perfection.

- 2 cups potatoes, peeled and cubed
- 2 tbsp butter
- ½ cup shredded cheddar cheese (or a mix of cheeses)
- 1 egg yolk
- ½ tsp salt
- ¼ tsp black pepper
- ½ tsp paprika (Hungarian sweet paprika preferred)
- ½ cup all-purpose flour (plus extra for dusting)
- 1 egg, beaten (for egg wash)
- 1 cup breadcrumbs
- Oil, for frying
Instructions
- Boil potatoes in salted water until tender (about 10–12 minutes). Drain well, then mash with butter until smooth.
- Mix in cheese, egg yolk, salt, pepper, and paprika. Stir until cheese is melted and incorporated.
- Let the mixture cool slightly, then stir in flour. Roll portions into stick shapes about 3 inches long.
- Dip each stick into the beaten egg, then roll in breadcrumbs to coat fully.
- Heat oil in a skillet to 350°F (175°C). Fry sticks in batches for 2–3 minutes until golden and crispy. Drain on paper towels.
- Enjoy hot, optionally with sour cream or a tangy dipping sauce.
Notes
- For a spicier version, add a pinch of cayenne pepper.
- These sticks can be made ahead and frozen before frying.
- Serve with a variety of dipping sauces for added flavor.
