Description

Delicious Croatian peach cookies filled with a sweet apricot jam and shaped like peaches.


Ingredients

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/2 cup apricot jam
  • food coloring (optional, for the peach color)
  • powdered sugar (for dusting)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix flour and baking powder.
  3. In a separate bowl, cream together butter and sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla and almond extracts.
  5. Gradually add the flour mixture to the wet ingredients and mix until combined.
  6. Shape the dough into small balls and flatten them slightly.
  7. Place a small dollop of apricot jam in the center and fold the dough over, sealing it well.
  8. Place on a baking sheet and bake for 15-20 minutes until golden.
  9. Once cooled, you can color them with food coloring for a peach effect.
  10. Dust with powdered sugar before serving.

Notes

  • These cookies can be made ahead of time and stored in an airtight container.
  • Alter the flavor of the jam to your liking – other fruit jams work well too!
