Deliciously unique, this Dandelion and Nettle Cake combines foraged greens with a moist cake that highlights the flavors of spring.


Ingredients

  • 100g sugar
  • 100g unsalted butter
  • 3 eggs
  • 100ml milk
  • 100g chopped dandelion leaves
  • 100g chopped nettles
  • 1 tsp baking powder
  • 1 tsp vanilla extract


Instructions

  1. Preheat the oven to 180°C (350°F) and grease a cake pan.
  2. In a mixing bowl, cream together the butter and sugar.
  3. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the vanilla extract.
  5. In another bowl, combine the flour, baking powder, and chopped greens.
  6. Gradually mix the dry ingredients into the wet mixture.
  7. Add the milk and stir until smooth.
  8. Pour the batter into the prepared cake pan.
