- 2 cups all-purpose flour
- 1 1/2 cups sugar
- 1 cup unsweetened cocoa powder
- 1 1/2 cups buttermilk
- 1 cup vegetable oil
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 2 cups fresh blackberries
- 2 cups heavy cream
- 8 ounces dark chocolate, chopped
- 1/4 cup powdered sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large bowl, mix flour, sugar, cocoa powder, baking soda, and salt.
- Add buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients and mix until combined.
- Gently fold in the blackberries.
- Divide the batter between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
- Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
- For the ganache, heat the heavy cream in a saucepan until just simmering, then pour over chopped dark chocolate. Stir until smooth.
- Once the cakes are cooled, layer them with frosting and drizzle the ganache over the top.
- Top with additional blackberries if desired.
Notes
- For a richer flavor, use dark cocoa powder.
- Allow the ganache to cool slightly before pouring for a thicker consistency.
- Store leftovers in an airtight container in the refrigerator.
