Description

A rich and indulgent cake featuring a vibrant blackberry flavor, layered with velvety frosting and topped with dark chocolate ganache.


Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 cup unsweetened cocoa powder
  • 1 1/2 cups buttermilk
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups fresh blackberries
  • 2 cups heavy cream
  • 8 ounces dark chocolate, chopped
  • 1/4 cup powdered sugar


Instructions

  1. Preheat your oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. In a large bowl, mix flour, sugar, cocoa powder, baking soda, and salt.
  3. Add buttermilk, vegetable oil, eggs, and vanilla to the dry ingredients and mix until combined.
  4. Gently fold in the blackberries.
  5. Divide the batter between the prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  6. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the ganache, heat the heavy cream in a saucepan until just simmering, then pour over chopped dark chocolate. Stir until smooth.
  8. Once the cakes are cooled, layer them with frosting and drizzle the ganache over the top.
  9. Top with additional blackberries if desired.

Notes

  • For a richer flavor, use dark cocoa powder.
  • Allow the ganache to cool slightly before pouring for a thicker consistency.
  • Store leftovers in an airtight container in the refrigerator.
