Description

A hearty and flavorful Irish lamb stew recipe by Gordon Ramsay that is perfect for cozy dinners.


Ingredients

Scale
  • 2 pounds lamb shoulder, cut into cubes
  • 4 tablespoons olive oil
  • 2 onions, chopped
  • 3 carrots, diced
  • 3 parsnips, diced
  • 4 garlic cloves, minced
  • 4 cups beef or lamb stock
  • 2 cups potatoes, diced
  • 2 sprigs of thyme
  • 1 bay leaf
  • 1 tablespoon tomato paste
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste


Instructions

  1. In a large pot, heat the olive oil over medium heat.
  2. Add the lamb cubes and sear until browned on all sides.
  3. Remove the lamb and set aside. In the same pot, add onions, carrots, and parsnips. Cook for about 5 minutes.
  4. Add the garlic and cook for another minute.
  5. Return the lamb to the pot and add the stock, potatoes, thyme, bay leaf, tomato paste, Worcestershire sauce, salt, and pepper.
  6. Bring the stew to a boil, then reduce heat and simmer for about 2 hours until the lamb is tender.
  7. Remove thyme and bay leaf before serving.

Notes

  • Let the stew sit for 30 minutes before serving to enhance flavors.
  • Serve with crusty bread for a complete meal.
