- 1 pie crust for a 9-inch quiche
- 1 cup sliced mushrooms
- 1 cup shredded cheese (such as Gruyere or Swiss)
- 4 large eggs
- 1 cup heavy cream
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat. Add sliced mushrooms and cook until softened.
- In a bowl, whisk together eggs, heavy cream, salt, pepper, and thyme.
- Spread the cooked mushrooms in the pie crust and sprinkle cheese on top.
- Pour the egg mixture over the filling.
- Bake for 35-40 minutes or until the quiche is set and golden brown.
- Let it cool for a few minutes before slicing and serving.
Notes
- For a lighter version, substitute half-and-half for heavy cream.
- You can add other vegetables like spinach or bell peppers for additional flavor.
