Ingredients

- 2 cups warm water
- 1 packet active dry yeast
- 1 tablespoon sugar
- 4 cups all-purpose flour
- 1 tablespoon salt
- 1 tablespoon fresh rosemary, chopped
- 1 cup mozzarella cheese, shredded
- 1/4 cup baking soda
- 1 egg, beaten (for wash)
Instructions
- In a bowl, combine warm water, yeast, and sugar. Let sit for 5 minutes until frothy.
- Add flour, salt, and rosemary to the yeast mixture and knead until smooth.
- Let dough rise for 1 hour, until doubled in size.
- Preheat oven to 450°F (232°C) and line baking sheets with parchment paper.
- Divide dough into equal pieces and shape into pretzels.
- Dissolve baking soda in boiling water and dip pretzels for 30 seconds.
- Place pretzels on baking sheet, brush with egg wash, and sprinkle with salt.
- Bake for 12-15 minutes until golden brown.
- Remove from oven, sprinkle mozzarella on top, and return to oven until melted.
