Description

A classic lemon meringue tart that balances sweet and tart flavors perfectly.


Ingredients

  • 1 prepared tart shell
  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 1 1/2 cups water
  • 3 large egg yolks
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 2 tablespoons unsalted butter
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup granulated sugar (for meringue)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a saucepan, combine sugar, cornstarch, and salt.
  3. Slowly whisk in water and cook over medium heat until thickened.
  4. In a small bowl, whisk egg yolks and temper them with a bit of the hot mixture. Return to pan and cook for another 2 minutes.
  5. Remove from heat and whisk in lemon juice, zest, and butter.
  6. Pour lemon filling into the prepared tart shell.
  7. In a clean bowl, beat egg whites and cream of tartar until soft peaks form, then gradually add sugar, beating until stiff peaks form.
  8. Spoon meringue on top of the lemon filling, spreading it to the edges to seal.
  9. Bake for 10-12 minutes or until the meringue is lightly browned.
  10. Cool before serving.

Notes

  • Let the tart cool completely before slicing for best results.
  • For a stronger lemon flavor, add more lemon zest.
