Description
A classic lemon meringue tart that balances sweet and tart flavors perfectly.

- 1 prepared tart shell
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1/4 teaspoon salt
- 1 1/2 cups water
- 3 large egg yolks
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 2 tablespoons unsalted butter
- 3 large egg whites
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar (for meringue)
Instructions
- Preheat the oven to 350°F (175°C).
- In a saucepan, combine sugar, cornstarch, and salt.
- Slowly whisk in water and cook over medium heat until thickened.
- In a small bowl, whisk egg yolks and temper them with a bit of the hot mixture. Return to pan and cook for another 2 minutes.
- Remove from heat and whisk in lemon juice, zest, and butter.
- Pour lemon filling into the prepared tart shell.
- In a clean bowl, beat egg whites and cream of tartar until soft peaks form, then gradually add sugar, beating until stiff peaks form.
- Spoon meringue on top of the lemon filling, spreading it to the edges to seal.
- Bake for 10-12 minutes or until the meringue is lightly browned.
- Cool before serving.
Notes
- Let the tart cool completely before slicing for best results.
- For a stronger lemon flavor, add more lemon zest.
