Deliciously sweet and tart, these Double Raspberry Meringue Bars feature a tangy raspberry filling topped with fluffy meringue.

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup raspberries, fresh or frozen
- 2 tablespoons granulated sugar
- 1 tablespoon lemon juice
- 3 egg whites
- 1/4 teaspoon cream of tartar
- 3/4 cup granulated sugar
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×9 inch baking pan.
- In a bowl, mix flour, powdered sugar, and salt, then cut in the butter until crumbly.
- Press the mixture into the bottom of the prepared pan and bake for 15 minutes.
- While the crust is baking, prepare the raspberry filling by combining raspberries, granulated sugar, and lemon juice in a saucepan over medium heat.
- Stir until raspberries break down and the mixture thickens, then set aside to cool.
- In a separate bowl, beat egg whites and cream of tartar until soft peaks form.
- Gradually add in the remaining sugar until stiff peaks form.
- Spread raspberry filling over baked crust, then spread meringue over the raspberry layer.
- Bake for an additional 15-20 minutes or until the meringue is golden. Allow to cool before slicing.
Notes
- For a stronger raspberry flavor, you can double the amount of raspberries.
- Ensure that no yolk gets into the egg whites for the best meringue texture.
