Description

Deliciously sweet and tart, these Double Raspberry Meringue Bars feature a tangy raspberry filling topped with fluffy meringue.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup raspberries, fresh or frozen
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 3/4 cup granulated sugar


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×9 inch baking pan.
  2. In a bowl, mix flour, powdered sugar, and salt, then cut in the butter until crumbly.
  3. Press the mixture into the bottom of the prepared pan and bake for 15 minutes.
  4. While the crust is baking, prepare the raspberry filling by combining raspberries, granulated sugar, and lemon juice in a saucepan over medium heat.
  5. Stir until raspberries break down and the mixture thickens, then set aside to cool.
  6. In a separate bowl, beat egg whites and cream of tartar until soft peaks form.
  7. Gradually add in the remaining sugar until stiff peaks form.
  8. Spread raspberry filling over baked crust, then spread meringue over the raspberry layer.
  9. Bake for an additional 15-20 minutes or until the meringue is golden. Allow to cool before slicing.

Notes

  • For a stronger raspberry flavor, you can double the amount of raspberries.
  • Ensure that no yolk gets into the egg whites for the best meringue texture.
