- 1 cup crushed graham crackers
- 1/4 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup dragon fruit puree
- 3 large eggs
- 1 tablespoon lime juice
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine the crushed graham crackers and melted butter. Press into the bottom of a greased springform pan.
- In a large bowl, beat the cream cheese and sugar until smooth.
- Add the vanilla extract and dragon fruit puree, mixing until fully incorporated.
- Add the eggs one at a time, mixing well after each addition. Stir in the lime juice.
- Pour the mixture over the crust in the springform pan.
- Bake for 50-60 minutes, until the center is set. Let cool, then refrigerate for at least 4 hours.
- Serve chilled and enjoy!
Notes
- For best results, use fresh dragon fruit for the puree.
- This cheesecake can be topped with additional dragon fruit pieces for added flavor and decoration.
- Make sure the cream cheese is softened to avoid lumps in the filling.
