Description

A vibrant and creamy cheesecake made with dragon fruit, perfect for a refreshing dessert.


Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup dragon fruit puree
  • 3 large eggs
  • 1 tablespoon lime juice


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine the crushed graham crackers and melted butter. Press into the bottom of a greased springform pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth.
  4. Add the vanilla extract and dragon fruit puree, mixing until fully incorporated.
  5. Add the eggs one at a time, mixing well after each addition. Stir in the lime juice.
  6. Pour the mixture over the crust in the springform pan.
  7. Bake for 50-60 minutes, until the center is set. Let cool, then refrigerate for at least 4 hours.
  8. Serve chilled and enjoy!

  • For best results, use fresh dragon fruit for the puree.
