A deliciously creamy cheesecake infused with the fragrant flavors of Earl Grey tea and topped with a light mousse.

- 1 1/2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 3 tablespoons granulated sugar
- 4 (8 ounce) packages cream cheese, softened
- 1 cup granulated sugar
- 4 large eggs
- 1/4 cup milk
- 2 tablespoons Earl Grey tea leaves
- 1 teaspoon vanilla extract
- 1 1/2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 tablespoons Earl Grey tea leaves
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, mix the graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
- In a large mixing bowl, beat the cream cheese until smooth. Add sugar and mix until well combined.
- Add eggs one at a time, mixing well after each addition. Stir in milk, Earl Grey tea leaves, and vanilla extract.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake for 55-60 minutes, or until the center is set. Let cool, then refrigerate for at least 4 hours.
- In a separate bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla, then fold in the Earl Grey tea leaves.
- Spread the mousse over the cooled cheesecake and refrigerate until set.
- Serve chilled, garnished with additional tea leaves if desired.
Notes
- For a more intense flavor, steep the tea leaves in the milk for 10 minutes before adding.
- This cheesecake can be made a day in advance and stored in the refrigerator until serving.
