Description

A deliciously creamy cheesecake infused with the fragrant flavors of Earl Grey tea and topped with a light mousse.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 3 tablespoons granulated sugar
  • 4 (8 ounce) packages cream cheese, softened
  • 1 cup granulated sugar
  • 4 large eggs
  • 1/4 cup milk
  • 2 tablespoons Earl Grey tea leaves
  • 1 teaspoon vanilla extract
  • 1 1/2 cups heavy cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons Earl Grey tea leaves


Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, mix the graham cracker crumbs, melted butter, and sugar. Press into the bottom of a springform pan.
  3. In a large mixing bowl, beat the cream cheese until smooth. Add sugar and mix until well combined.
  4. Add eggs one at a time, mixing well after each addition. Stir in milk, Earl Grey tea leaves, and vanilla extract.
  5. Pour the cheesecake filling over the crust in the springform pan.
  6. Bake for 55-60 minutes, or until the center is set. Let cool, then refrigerate for at least 4 hours.
  7. In a separate bowl, whip heavy cream until soft peaks form. Gradually add powdered sugar and vanilla, then fold in the Earl Grey tea leaves.
  8. Spread the mousse over the cooled cheesecake and refrigerate until set.
  9. Serve chilled, garnished with additional tea leaves if desired.

Notes

  • For a more intense flavor, steep the tea leaves in the milk for 10 minutes before adding.
  • This cheesecake can be made a day in advance and stored in the refrigerator until serving.
