Description

Delicious and moist bakery-style muffins made with pistachios for a delightful treat.


Ingredients

  • 1 cup shelled pistachios
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup milk
  • 2 large eggs
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt


Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a food processor, blend the pistachios until finely chopped, but not a paste.
  3. In a bowl, mix flour, sugar, baking powder, and salt.
  4. In another bowl, whisk together melted butter, milk, and eggs.
  5. Combine the wet and dry ingredients and stir until just combined.
  6. Fold in the chopped pistachios.
  7. Divide the batter among the muffin cups.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
