- 1 cup granulated sugar

- 3 large egg yolks

Instructions
- In a saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries burst and the mixture is bubbly.
- In a separate bowl, whisk together egg yolks and salt.
- Slowly whisk the blueberry mixture into the egg yolks to temper them.
- Return the mixture to the saucepan and cook on low heat until thickened.
- Remove from heat and stir in butter until melted and smooth.
- Strain the mixture to remove skins and cool.
