Description

This Easy Blueberry Curd is a delightful and versatile spread, perfect for toast, desserts, and more.


Ingredients

  • 2 cups fresh blueberries
  • 1 cup granulated sugar
  • 1/4 cup fresh lemon juice
  • 1/4 cup unsalted butter
  • 3 large egg yolks
  • 1/4 teaspoon salt


Instructions

  1. In a saucepan, combine blueberries, sugar, and lemon juice. Cook over medium heat until the blueberries burst and the mixture is bubbly.
  2. In a separate bowl, whisk together egg yolks and salt.
  3. Slowly whisk the blueberry mixture into the egg yolks to temper them.
  4. Return the mixture to the saucepan and cook on low heat until thickened.
  5. Remove from heat and stir in butter until melted and smooth.
  6. Strain the mixture to remove skins and cool.
