This Easy Christmas Cake Traybake is a festive, delicious, and easy-to-make dessert perfect for the holiday season.


Ingredients

  • 200 grams mixed dried fruits
  • 100 grams unsalted butter
  • 150 grams brown sugar
  • 2 large eggs
  • 200 grams all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract
  • 100 grams icing sugar
  • 2 tablespoons water


Instructions

  1. Preheat the oven to 180°C (350°F).
  2. In a bowl, mix the dried fruits with a little flour.
  3. In a saucepan, melt the butter and sugar over low heat until combined.
  4. Remove from heat and let cool slightly before adding eggs one at a time.
  5. Fold in the flour, baking powder, and spices.
  6. Gently mix in the floured fruits and vanilla extract.
  7. Pour the batter into a lined baking tray and smooth the top.
  8. Bake for about 25-30 minutes or until golden and firm.
  9. Let cool and prepare the icing by mixing icing sugar with water.
