Description

Delicious and festive fruitcake cookies that are perfect for holiday baking.


Ingredients

  • 1 cup mixed dried fruit (raisins, cranberries, and apricots)
  • 1 cup chopped nuts (walnuts or pecans)
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together the butter and brown sugar.
  3. Beat in the eggs, one at a time, then stir in the vanilla.
  4. In another bowl, whisk together the flour, baking soda, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Fold in the mixed dried fruit and nuts.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes, or until edges are golden brown.
  9. Remove from the oven and cool on a wire rack.

Notes

  • For a more festive flavor, add 1/2 teaspoon of almond extract.
