- 8 small potatoes
- 2 hard-boiled eggs
- 1/4 cup mayonnaise
- 1 teaspoon mustard
- Salt to taste
- Black pepper to taste
- Paprika for garnish
Instructions
- Boil the small potatoes until fork-tender, about 15-20 minutes.
- Once cooled, slice the potatoes in half and scoop out a small portion of the flesh.
- Mash the scooped potatoes in a bowl with the hard-boiled eggs, mayonnaise, mustard, salt, and black pepper until smooth.
- Fill the potato halves with the mixture, smoothing the top.
- Sprinkle paprika on top for garnish.
- Serve cold or at room temperature.
Notes
- For added flavor, consider adding chopped green onions or relish to the filling.
- These can be made ahead of time and stored in the refrigerator until ready to serve.
