Description

This hearty ham and bean soup is perfect for a cozy dinner. Packed with flavor and nutrition, it’s an easy dish to prepare any night of the week.


Ingredients

  • 1 pound ham, diced
  • 1 cup dry navy or great northern beans
  • 1 onion, chopped
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste


Instructions

  1. Soak the beans overnight in water.
  2. In a large pot, sauté the onion, carrots, and celery until softened.
  3. Add the garlic and cook for another minute.
  4. Drain the beans and add them to the pot along with the ham, broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours or until beans are tender.
  6. Season with salt and pepper to taste before serving.
