- 1 pound ham, diced
- 1 cup dry navy or great northern beans
- 1 onion, chopped
- 2 carrots, chopped
- 2 celery stalks, chopped
- 3 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Soak the beans overnight in water.
- In a large pot, sauté the onion, carrots, and celery until softened.
- Add the garlic and cook for another minute.
- Drain the beans and add them to the pot along with the ham, broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for about 1.5 to 2 hours or until beans are tender.
- Season with salt and pepper to taste before serving.
