A delicious and easy recipe for making sweet tofu pockets filled with sushi rice.
Ingredients

- 1 cup sushi rice
- 2 cups water
- 1/4 cup rice vinegar
- 2 tablespoons sugar
- 1/2 teaspoon salt
- 8 pieces inari sushi pockets (sweet tofu pockets)
- optional sesame seeds for garnish
Instructions
- Rinse the sushi rice under cold water until the water runs clear.
- In a pot, combine the rinsed rice and water, and bring to a boil. Then, reduce heat, cover, and simmer for about 18 minutes.
- While the rice is cooking, mix the rice vinegar, sugar, and salt in a small bowl until dissolved.
- Once the rice is cooked, remove it from heat and let it sit covered for 10 minutes. Fluff the rice and stir in the vinegar mixture.
- Allow the rice to cool to room temperature.
- Carefully open the inari pockets and fill each with sushi rice, packing it gently.
- Sprinkle with sesame seeds if desired and serve.
Notes
- For added flavor, consider adding vegetables or protein to the rice filling.
- The rice mixture can be made a day ahead for convenience.
