This Easy Kiwi Blender Cake is a light and delicious dessert made entirely in a blender.

- 2 ripe kiwis
- 1 cup sugar
- 1/2 cup melted butter
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°F (175°C).
- Grease a 9-inch round cake pan.
- In a blender, combine kiwis, sugar, melted butter, vanilla, and eggs; blend until smooth.
- Add flour, baking powder, and salt; blend again until just combined.
- Pour the batter into the prepared cake pan.
- Bake for 30-35 minutes or until a toothpick comes out clean.
- Let cool before serving.
Notes
- Serve with whipped cream and fresh kiwi slices for garnish.
- Can be stored in an airtight container at room temperature for up to 3 days.
