Description

A delightful and creamy mango curd perfect for spreading on toast or using in desserts.


Ingredients

Scale
  • 2 cups fresh mango puree
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter
  • 4 large egg yolks
  • 1/4 teaspoon salt
  • 2 tablespoons lime juice


Instructions

  1. In a saucepan, combine mango puree, sugar, and butter over medium heat.
  2. Whisk together the egg yolks and salt in a bowl.
  3. Once the mango mixture is warm, gradually whisk in the egg yolk mixture.
  4. Cook over low heat, stirring constantly, until the mixture thickens.
  5. Remove from heat and stir in lime juice.
  6. Transfer to a container and let cool before refrigerating.

Notes

  • You can use frozen mango if fresh mango is not available.
  • This curd can be stored in the refrigerator for up to 2 weeks.
