- 1 cup rolled oats
- 1/2 cup peanut butter
- 1/4 cup honey
- 1/2 cup raspberries (fresh or frozen)
- 1/4 cup protein powder
- 1/4 cup unsweetened shredded coconut
- 1/4 cup chopped nuts (optional)
Instructions
- In a large bowl, mix together the rolled oats, protein powder, and shredded coconut.
- Add the peanut butter and honey, then stir until well combined.
- Gently fold in the raspberries and chopped nuts if using.
- Roll the mixture into small balls, about 1 inch in diameter.
- Place the balls on a parchment-lined baking sheet and refrigerate for at least 30 minutes to set.
- Store in an airtight container in the fridge.
Notes
- These protein balls can be stored in the fridge for up to a week.
- Feel free to substitute almond butter for a different flavor.
- Add more honey for a sweeter taste if desired.
