Description
A traditional Egyptian dish, Koshari is a hearty meal made with rice, lentils, pasta, and topped with a tomato sauce and crispy onions.
Ingredients

- 1 cup brown lentils
- 1 cup long-grain rice
- 1 cup elbow macaroni
- 1 large onion, thinly sliced
- 2 cloves garlic, minced
- 1 can (14 oz) diced tomatoes
- 2 tablespoons tomato paste
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon cayenne pepper
- 3 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- In a large pot, cook lentils in salted water until tender, about 20 minutes. Drain and set aside.
- In another pot, cook rice according to package instructions. Set aside.
- Cook macaroni according to package instructions. Set aside.
- In a skillet, heat olive oil over medium heat. Add onions and fry until golden and crispy. Remove and set aside.
- In the same skillet, add garlic and sauté for a minute. Add diced tomatoes, tomato paste, cumin, coriander, cayenne pepper, salt, and pepper. Simmer for 10 minutes.
- To serve, layer rice, lentils, and macaroni in bowls, then top with the tomato sauce and crispy onions.
Notes
- For extra flavor, serve with a drizzle of vinegar over the top.
- You can add chickpeas for added protein.
