Description

A hearty and nutritious mix of lentils, rice, and pasta, inspired by traditional Egyptian cuisine.


Ingredients

Scale
  • 1 cup lentils
  • 1 cup rice
  • 1 cup pasta
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Rinse the lentils and rice under cold water.
  2. In a large pot, heat olive oil over medium heat and sauté the onion and garlic until fragrant.
  3. Add the lentils, rice, and pasta to the pot; stir well to combine.
  4. Pour in the vegetable broth and add the cumin, coriander, salt, and pepper.
  5. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes or until the rice and pasta are cooked.
  6. Fluff with a fork and serve warm.

  • Adjust spices to taste.
