A hearty and nutritious mix of lentils, rice, and pasta, inspired by traditional Egyptian cuisine.
Ingredients

- 1 cup lentils
- 1 cup rice
- 1 cup pasta
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Rinse the lentils and rice under cold water.
- In a large pot, heat olive oil over medium heat and sauté the onion and garlic until fragrant.
- Add the lentils, rice, and pasta to the pot; stir well to combine.
- Pour in the vegetable broth and add the cumin, coriander, salt, and pepper.
- Bring to a boil, then reduce heat to low and simmer for 20-25 minutes or until the rice and pasta are cooked.
- Fluff with a fork and serve warm.
Notes
- Adjust spices to taste.
- This dish can be served with a side salad or bread.
- Leftovers can be stored in the refrigerator for up to 3 days.
