Ingredients

- 1 cup fresh crab meat
- 1/2 cup heavy cream
- 1/4 cup milk
- 2 large egg yolks
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup turbinado sugar for topping
Instructions
- Preheat the oven to 325°F (165°C).
- In a saucepan, combine the heavy cream, milk, and vanilla extract; heat until just simmering.
- In a bowl, whisk together the egg yolks and granulated sugar until pale.
- Gradually add the warm cream mixture to the egg yolks, whisking constantly.
- Fold in the crab meat and salt.
- Pour the mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
- Bake for 25-30 minutes until just set.
- Let cool, then refrigerate until fully chilled.
- Before serving, sprinkle turbinado sugar on top and use a kitchen torch to caramelize the sugar.
Notes
- For a richer flavor, consider adding a pinch of cayenne pepper.
- Serve with a side of mixed greens for a complete meal.
