Description

A sophisticated seafood dish featuring creamy crab and a caramelized sugar topping.


Ingredients

Scale
  • 1 cup fresh crab meat
  • 1/2 cup heavy cream
  • 1/4 cup milk
  • 2 large egg yolks
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup turbinado sugar for topping


Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a saucepan, combine the heavy cream, milk, and vanilla extract; heat until just simmering.
  3. In a bowl, whisk together the egg yolks and granulated sugar until pale.
  4. Gradually add the warm cream mixture to the egg yolks, whisking constantly.
  5. Fold in the crab meat and salt.
  6. Pour the mixture into ramekins and place them in a baking dish. Fill the dish with hot water halfway up the sides of the ramekins.
  7. Bake for 25-30 minutes until just set.
  8. Let cool, then refrigerate until fully chilled.
  9. Before serving, sprinkle turbinado sugar on top and use a kitchen torch to caramelize the sugar.

Notes

  • For a richer flavor, consider adding a pinch of cayenne pepper.
  • Serve with a side of mixed greens for a complete meal.
