Description

A delightful Finnish dessert featuring a unique combination of rye crust and sweet cloudberries.


Ingredients

Scale
  • 1 ½ cups rye flour
  • ½ cup all-purpose flour
  • ½ cup unsalted butter, softened
  • ½ cup sugar
  • 1 large egg
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 2 cups cloudberries (fresh or frozen)
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the rye flour, all-purpose flour, baking powder, and salt.
  3. In another bowl, cream the softened butter and sugar until light and fluffy.
  4. Add the egg to the butter mixture and mix well.
  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.
  6. Press the dough into a tart pan evenly across the bottom and up the sides.
  7. In a separate bowl, combine cloudberries, cornstarch, and lemon juice.
  8. Pour the cloudberry mixture into the prepared crust.
  9. Bake for 30-35 minutes or until the crust is golden brown.
  10. Allow to cool before serving.

Notes

  • Cloudberries can be substituted with other berries if unavailable.
  • Serve with whipped cream for added richness.
  • This tart can be stored in the refrigerator for up to 3 days.
