- 1 ½ cups rye flour
- ½ cup all-purpose flour
- ½ cup unsalted butter, softened
- ½ cup sugar
- 1 large egg
- 1 teaspoon baking powder
- ½ teaspoon salt
- 2 cups cloudberries (fresh or frozen)
- 2 tablespoons cornstarch
- 1 tablespoon lemon juice
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix the rye flour, all-purpose flour, baking powder, and salt.
- In another bowl, cream the softened butter and sugar until light and fluffy.
- Add the egg to the butter mixture and mix well.
- Gradually add the dry ingredients to the wet mixture, stirring until combined.
- Press the dough into a tart pan evenly across the bottom and up the sides.
- In a separate bowl, combine cloudberries, cornstarch, and lemon juice.
- Pour the cloudberry mixture into the prepared crust.
- Bake for 30-35 minutes or until the crust is golden brown.
- Allow to cool before serving.
Notes
- Cloudberries can be substituted with other berries if unavailable.
- Serve with whipped cream for added richness.
- This tart can be stored in the refrigerator for up to 3 days.
