Ingredients

- 1 cup all-purpose flour
- 1/2 cup coconut flour
- 1/2 cup sugar
- 2 ripe bananas, mashed
- 1/4 cup coconut oil, melted
- 2 eggs
- 1/2 cup coconut milk
- 2 teaspoons matcha powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup shredded coconut
Instructions
- Preheat oven to 350°F (175°C) and grease a muffin tin.
- In a large bowl, mix the dry ingredients: all-purpose flour, coconut flour, sugar, matcha powder, baking powder, baking soda, and salt.
- In another bowl, combine mashed bananas, melted coconut oil, eggs, and coconut milk.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Fold in shredded coconut.
- Divide the batter into the muffin tin, filling each cup about 2/3 full.
- Bake for 18-20 minutes or until a toothpick inserted comes out clean.
- Allow to cool for a few minutes before transferring to a wire rack to cool completely.
Notes
- Let the muffins cool completely for the best texture.
- These muffins can be stored in an airtight container for up to 5 days.
