Description

Deliciously fluffy muffins infused with the earthy flavor of matcha, complemented by sweet banana and shredded coconut.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup coconut flour
  • 1/2 cup sugar
  • 2 ripe bananas, mashed
  • 1/4 cup coconut oil, melted
  • 2 eggs
  • 1/2 cup coconut milk
  • 2 teaspoons matcha powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup shredded coconut


Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix the dry ingredients: all-purpose flour, coconut flour, sugar, matcha powder, baking powder, baking soda, and salt.
  3. In another bowl, combine mashed bananas, melted coconut oil, eggs, and coconut milk.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Fold in shredded coconut.
  6. Divide the batter into the muffin tin, filling each cup about 2/3 full.
  7. Bake for 18-20 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool for a few minutes before transferring to a wire rack to cool completely.
