- 8 ounces elbow macaroni
- 2 tablespoons unsalted butter
- 2 tablespoons all-purpose flour
- 2 cups milk
- 1 teaspoon Dijon mustard
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup crumbled blue cheese
- 1/2 cup grated Parmesan cheese
- 1/4 cup bread crumbs
- 1/4 teaspoon paprika
Instructions
- Preheat the oven to 350°F (175°C).
- Cook the elbow macaroni according to package instructions; drain and set aside.
- In a saucepan, melt butter over medium heat. Whisk in the flour and cook for about 1 minute.
- Gradually add the milk, whisking constantly until thickened.
- Stir in mustard and cheeses until melted and smooth.
- Combine the pasta with the cheese sauce and mix well.
- Transfer the mixture to a greased baking dish.
- Sprinkle bread crumbs and paprika on top.
- Bake for 25-30 minutes or until golden brown and bubbly.
