Description
A rich and hearty French onion soup topped with melted cheese and crusty bread.

- 6 large onions, thinly sliced
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 8 cups beef broth
- 1 cup dry white wine
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon thyme
- 1 tablespoon balsamic vinegar
- 8 slices baguette
- 2 cups shredded Gruyère cheese
Instructions
- In a large pot, melt the butter and olive oil over medium heat.
- Add the onions and sugar, cooking until deep golden brown, stirring frequently.
- Pour in the wine and scrape the bottom of the pot to deglaze.
- Add the beef broth, salt, pepper, thyme, and balsamic vinegar. Bring to a boil and then reduce heat.
- Simmer for 30-40 minutes, adjusting seasoning as needed.
- Toast the baguette slices and top each slice with cheese.
- Put the soup in bowls, top with the toasted bread and cheese, and broil until cheese is bubbly.
Notes
- For a richer flavor, use homemade beef broth.
- Feel free to add a splash of sherry for extra depth.
