Description

A rich and hearty French onion soup topped with melted cheese and crusty bread.


Ingredients

  • 6 large onions, thinly sliced
  • 4 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 8 cups beef broth
  • 1 cup dry white wine
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 tablespoon balsamic vinegar
  • 8 slices baguette
  • 2 cups shredded Gruyère cheese


Instructions

  1. In a large pot, melt the butter and olive oil over medium heat.
  2. Add the onions and sugar, cooking until deep golden brown, stirring frequently.
  3. Pour in the wine and scrape the bottom of the pot to deglaze.
  4. Add the beef broth, salt, pepper, thyme, and balsamic vinegar. Bring to a boil and then reduce heat.
  5. Simmer for 30-40 minutes, adjusting seasoning as needed.
  6. Toast the baguette slices and top each slice with cheese.
  7. Put the soup in bowls, top with the toasted bread and cheese, and broil until cheese is bubbly.

Notes

  • For a richer flavor, use homemade beef broth.
  • Feel free to add a splash of sherry for extra depth.
