A festive twist on the classic tiramisu, featuring gingerbread flavors for a holiday treat.
Ingredients

- 2 cups brewed coffee, cooled
- 1/2 cup dark rum
- 1 package gingerbread cookies
- 8 ounces mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
Instructions
- In a shallow dish, combine brewed coffee and dark rum.
- Dip each gingerbread cookie briefly in the coffee mixture and layer them in a dish.
- In a bowl, whip the heavy cream with powdered sugar, vanilla, cinnamon, and ginger until stiff peaks form.
- Fold the whipped cream into the mascarpone cheese until smooth.
- Spread half of the mascarpone mixture over the first layer of cookies.
- Repeat the process with another layer of dipped cookies and the remaining mascarpone mixture.
- Chill in the fridge for at least 4 hours, preferably overnight.
- Dust with extra cinnamon or ginger before serving.
Notes
- This can be made a day in advance for better flavor.
