Description

A festive twist on the classic tiramisu, featuring gingerbread flavors for a holiday treat.


Ingredients

  • 2 cups brewed coffee, cooled
  • 1/2 cup dark rum
  • 1 package gingerbread cookies
  • 8 ounces mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger


Instructions

  1. In a shallow dish, combine brewed coffee and dark rum.
  2. Dip each gingerbread cookie briefly in the coffee mixture and layer them in a dish.
  3. In a bowl, whip the heavy cream with powdered sugar, vanilla, cinnamon, and ginger until stiff peaks form.
  4. Fold the whipped cream into the mascarpone cheese until smooth.
  5. Spread half of the mascarpone mixture over the first layer of cookies.
  6. Repeat the process with another layer of dipped cookies and the remaining mascarpone mixture.
  7. Chill in the fridge for at least 4 hours, preferably overnight.
  8. Dust with extra cinnamon or ginger before serving.

Notes

  • This can be made a day in advance for better flavor.
