A rich, moist pudding made with dates and served with a luscious toffee sauce.
Ingredients

- 200 grams pitted dates
- 300 milliliters water
- 1 teaspoon baking soda
- 100 grams butter, softened
- 150 grams brown sugar
- 2 large eggs
- 200 grams self-raising flour
- 1 teaspoon vanilla extract
- 200 milliliters heavy cream
- 50 grams treacle
Instructions
- Preheat the oven to 180°C (350°F).
- Chop the dates and place them in a saucepan with water, bring to a boil.
- Add baking soda and let cool.
- In a bowl, cream the butter and sugar together until light and fluffy.
- Add the eggs one by one, beating well after each addition.
- Fold in the flour and then the date mixture.
- Pour the mixture into a greased baking dish.
- Bake for 30-35 minutes until set.
- For the sauce, combine cream and treacle in a saucepan and heat gently until warm.
- Serve the pudding warm drizzled with toffee sauce.
Notes
- Serve with vanilla ice cream for an extra treat.
- Can be made a day in advance and reheated.
