Description

A rich, moist pudding made with dates and served with a luscious toffee sauce.


Ingredients

Scale
  • 200 grams pitted dates
  • 300 milliliters water
  • 1 teaspoon baking soda
  • 100 grams butter, softened
  • 150 grams brown sugar
  • 2 large eggs
  • 200 grams self-raising flour
  • 1 teaspoon vanilla extract
  • 200 milliliters heavy cream
  • 50 grams treacle


Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Chop the dates and place them in a saucepan with water, bring to a boil.
  3. Add baking soda and let cool.
  4. In a bowl, cream the butter and sugar together until light and fluffy.
  5. Add the eggs one by one, beating well after each addition.
  6. Fold in the flour and then the date mixture.
  7. Pour the mixture into a greased baking dish.
  8. Bake for 30-35 minutes until set.
  9. For the sauce, combine cream and treacle in a saucepan and heat gently until warm.
  10. Serve the pudding warm drizzled with toffee sauce.

Notes

  • Serve with vanilla ice cream for an extra treat.
  • Can be made a day in advance and reheated.
