Ingredients

- 1 cup all-purpose flour
- 1/2 cup powdered sugar
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup freshly squeezed grapefruit juice
- 1 tablespoon grapefruit zest
- 1/4 cup all-purpose flour
- 1/2 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- In a mixing bowl, combine 1 cup of flour and powdered sugar. Add butter and mix until crumbly.
- Press the mixture into a greased 9×9 inch pan to form the crust.
- Bake the crust for 15 minutes.
- In a separate bowl, whisk together granulated sugar, eggs, grapefruit juice, and zest.
- Add 1/4 cup of flour and baking powder, mix until smooth.
- Pour the filling over the baked crust.
- Bake for an additional 20-25 minutes.
- Allow to cool before cutting into squares.
Notes
- Using fresh grapefruit juice and zest enhances the flavor.
- Store in the refrigerator for up to a week.
