Description

Delicious and tangy grapefruit bars with a buttery crust.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup freshly squeezed grapefruit juice
  • 1 tablespoon grapefruit zest
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon baking powder


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine 1 cup of flour and powdered sugar. Add butter and mix until crumbly.
  3. Press the mixture into a greased 9×9 inch pan to form the crust.
  4. Bake the crust for 15 minutes.
  5. In a separate bowl, whisk together granulated sugar, eggs, grapefruit juice, and zest.
  6. Add 1/4 cup of flour and baking powder, mix until smooth.
  7. Pour the filling over the baked crust.
  8. Bake for an additional 20-25 minutes.
  9. Allow to cool before cutting into squares.

  • Using fresh grapefruit juice and zest enhances the flavor.
