A delicious and easy recipe for Grilled Barramundi with Lemon Butter & Garden Salad.

- 1 pound barramundi fillets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons unsalted butter
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 4 cups mixed salad greens (e.g., romaine, spinach, arugula)
- 1 cup cherry tomatoes, halved
- 1 cucumber, sliced
- 1/4 red onion, thinly sliced
- 1/4 cup balsamic vinaigrette
Instructions
- Preheat the grill to medium-high heat.
- In a small bowl, mix together olive oil, garlic powder, paprika, salt, and pepper. Brush this mixture over both sides of the barramundi fillets.
- Place the barramundi on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.
- While the fish is grilling, melt the butter in a small saucepan over low heat. Stir in the lemon juice and lemon zest, then remove from heat.
- In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion. Drizzle with balsamic vinaigrette and toss to coat.
- Once the barramundi is cooked, remove it from the grill and drizzle the lemon butter sauce over the top.
- Serve the grilled barramundi alongside the garden salad.
Notes
- For a spicier kick, add a pinch of cayenne pepper to the olive oil mixture.
- Substitute barramundi with another white fish like tilapia or cod if preferred.
