Description

A delicious and easy recipe for Grilled Barramundi with Lemon Butter & Garden Salad.


Ingredients

  • 1 pound barramundi fillets
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons unsalted butter
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon lemon zest
  • 4 cups mixed salad greens (e.g., romaine, spinach, arugula)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup balsamic vinaigrette


Instructions

  1. Preheat the grill to medium-high heat.
  2. In a small bowl, mix together olive oil, garlic powder, paprika, salt, and pepper. Brush this mixture over both sides of the barramundi fillets.
  3. Place the barramundi on the grill and cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.
  4. While the fish is grilling, melt the butter in a small saucepan over low heat. Stir in the lemon juice and lemon zest, then remove from heat.
  5. In a large bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion. Drizzle with balsamic vinaigrette and toss to coat.
  6. Once the barramundi is cooked, remove it from the grill and drizzle the lemon butter sauce over the top.
  7. Serve the grilled barramundi alongside the garden salad.

Notes

  • For a spicier kick, add a pinch of cayenne pepper to the olive oil mixture.
  • Substitute barramundi with another white fish like tilapia or cod if preferred.
