Ingredients

  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • 1/2 teaspoon cream of tartar
  • 1/2 teaspoon guava puree
  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar (for buttercream)
  • 1/4 cup guava puree (for buttercream)
  • 1 teaspoon vanilla extract


Instructions

  1. In a bowl, sift almond flour and powdered sugar.
  2. In another bowl, whisk egg whites and gradually add granulated sugar until stiff peaks form.
  3. Gently fold dry ingredients into the meringue.
  4. Pipe circles on parchment paper and let them rest.
  5. Bake at 300°F for 15-20 minutes.
  6. For buttercream, beat softened butter then add powdered sugar, guava puree, and vanilla until smooth.
  7. Pipe buttercream on half of the macarons and sandwich together.
