Description

A delicious and hearty recipe featuring chicken and couscous, perfect for autumn meals.


Ingredients

  • 4 chicken breasts
  • 1 cup couscous
  • 2 cups chicken broth
  • 1 onion, chopped
  • 2 carrots, diced
  • 1 zucchini, diced
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt to taste
  • Black pepper to taste


Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add chicken breasts, season with salt and pepper, and cook until browned on both sides.
  3. Remove chicken from the skillet and set aside.
  4. In the same skillet, add onion, garlic, carrots, and zucchini. Sauté until tender.
  5. Stir in thyme and paprika.
  6. Add the chicken back to the skillet along with chicken broth and bring to a simmer.
  7. Reduce heat and cover, cooking for 15-20 minutes until chicken is cooked through.
  8. While chicken is cooking, prepare couscous according to package instructions.
  9. Serve chicken over couscous with pan juices.
