Ingredients

- 4 chicken breasts
- 1 cup couscous
- 2 cups chicken broth
- 1 onion, chopped
- 2 carrots, diced
- 1 zucchini, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 2 tablespoons olive oil
- Salt to taste
- Black pepper to taste
Instructions
- In a large skillet, heat olive oil over medium heat.
- Add chicken breasts, season with salt and pepper, and cook until browned on both sides.
- Remove chicken from the skillet and set aside.
- In the same skillet, add onion, garlic, carrots, and zucchini. Sauté until tender.
- Stir in thyme and paprika.
- Add the chicken back to the skillet along with chicken broth and bring to a simmer.
- Reduce heat and cover, cooking for 15-20 minutes until chicken is cooked through.
- While chicken is cooking, prepare couscous according to package instructions.
- Serve chicken over couscous with pan juices.
