- 1 cup almond flour
- 1/2 cup coconut flour
- 1/4 cup erythritol
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/4 cup unsweetened applesauce
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup chopped nuts or sugar-free chocolate chips (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix together almond flour, coconut flour, erythritol, baking powder, salt, and cinnamon.
- Add in the applesauce, eggs, and vanilla extract. Mix until a dough forms.
- If desired, fold in chopped nuts or sugar-free chocolate chips.
- Drop spoonfuls of dough onto a lined baking sheet.
- Bake for 12-15 minutes, or until the edges are golden.
- Let cool before serving.
Notes
- Store cookies in an airtight container for up to one week.
- Make sure to use sugar-free chocolate chips if including them.
