Description

Delicious, festive cookies that are perfect for diabetics, made with healthy ingredients and no added sugar.


Ingredients

  • 1 cup almond flour
  • 1/2 cup coconut flour
  • 1/4 cup erythritol
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/4 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped nuts or sugar-free chocolate chips (optional)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together almond flour, coconut flour, erythritol, baking powder, salt, and cinnamon.
  3. Add in the applesauce, eggs, and vanilla extract. Mix until a dough forms.
  4. If desired, fold in chopped nuts or sugar-free chocolate chips.
  5. Drop spoonfuls of dough onto a lined baking sheet.
  6. Bake for 12-15 minutes, or until the edges are golden.
  7. Let cool before serving.
