- 1 cup quinoa
- 1 cup green or brown lentils
- 2 cups fresh spinach, chopped
- 1 cup diced tomatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat olive oil over medium heat. Sauté onion and garlic until softened.
- Add quinoa, lentils, vegetable broth, diced tomatoes, oregano, basil, salt, and pepper. Stir to combine.
- Bring the mixture to a boil, then reduce heat and simmer for 20 minutes.
- Once cooked, stir in the chopped spinach.
- Transfer the mixture to a baking dish and spread evenly.
- Bake in the preheated oven for 25-30 minutes.
- Remove and let cool for a few minutes before serving.
Notes
- This dish can be made ahead and frozen for later use.
- Feel free to add other vegetables like bell peppers or zucchini.
