Description

A nutritious and hearty quinoa lentil bake packed with spinach and spices.


Ingredients

Scale
  • 1 cup quinoa
  • 1 cup lentils
  • 2 cups fresh spinach
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 2 cups vegetable broth
  • 1 tablespoon olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a pan, heat olive oil and sauté onion and garlic until translucent.
  3. Add cumin and paprika, cooking for another minute.
  4. In a large bowl, combine cooked quinoa, lentils, sautéed mixture, and spinach.
  5. Pour the mixture into a baking dish and add vegetable broth.
  6. Cover with foil and bake for 30 minutes.
  7. Remove the foil and bake for an additional 10-15 minutes until golden.

Notes

  • This dish can be made ahead and stored in the fridge for up to 3 days.
  • Feel free to add other vegetables as desired.
