Description

A delicious and hearty steak and Guinness pie, perfect for a cozy dinner!


Ingredients

Scale
  • 2 pounds beef chuck, cut into cubes
  • 2 tablespoons vegetable oil
  • 1 large onion, chopped
  • 2 carrots, diced
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup beef broth
  • 1 cup Guinness beer
  • 1 tablespoon Worcestershire sauce
  • 2 ready-made pastry sheets
  • 1 egg, beaten for egg wash


Instructions

  1. In a large pot, heat the vegetable oil over medium heat. Add the beef and brown it on all sides.
  2. Remove the beef and add the onion and carrots, cooking until softened.
  3. Stir in the tomato paste, thyme, salt, and pepper, and cook for a minute.
  4. Add the beef back into the pot along with the broth, Guinness, and Worcestershire sauce. Bring to a boil, then reduce heat and simmer for 2 hours.
  5. Preheat the oven to 400°F (200°C).
  6. Once the meat mixture has thickened, roll out the pastry and line a pie dish. Fill with the meat mixture and cover with another layer of pastry.
  7. Make slits in the top for venting and brush with egg wash.
  8. Bake for 30-35 minutes or until golden brown.

Notes

  • This pie can be made a day ahead and reheated in the oven.
  • Serve with mashed potatoes or a side salad.
