Description

Delicious honey cornbread muffins that are sweet, moist, and perfect for breakfast or as a side dish.


Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1/3 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup honey
  • 1/4 cup unsalted butter, melted
  • 1 large egg


Instructions

  1. Preheat the oven to 400°F (200°C) and grease a muffin tin.
  2. In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
  3. In another bowl, whisk together the milk, honey, melted butter, and egg.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Fill each muffin cup about 2/3 full with the batter.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.

Notes

  • For extra sweetness, drizzle honey on top of the muffins before serving.
  • These muffins can be stored in an airtight container for up to 3 days.
