- 1 cup cornmeal
- 1 cup all-purpose flour
- 1/3 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup honey
- 1/4 cup unsalted butter, melted
- 1 large egg
Instructions
- Preheat the oven to 400°F (200°C) and grease a muffin tin.
- In a large bowl, mix together the cornmeal, flour, sugar, baking powder, and salt.
- In another bowl, whisk together the milk, honey, melted butter, and egg.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Fill each muffin cup about 2/3 full with the batter.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
Notes
- For extra sweetness, drizzle honey on top of the muffins before serving.
- These muffins can be stored in an airtight container for up to 3 days.
