Instructions
- Preheat your oven to 325°F (160°C).
- In a mixing bowl, beat the egg yolks and sugar until creamy.
- Add lemon juice and zest, mixing until well combined.
- In a separate bowl, beat the egg whites and cream of tartar until stiff peaks form.
- Fold the egg whites into the lemon mixture gently.
- Pour the mixture into a prepared pie crust.
- Bake for 25-30 minutes until set and lightly golden.
- Let it cool before serving.
