Description

A traditional Irish dish made with creamy mashed potatoes and kale or cabbage.


Ingredients

Scale
  • 2 pounds red potatoes
  • 1 cup chopped green onions
  • 1 cup chopped kale or cabbage
  • 1/2 cup milk
  • 4 tablespoons butter
  • salt to taste
  • black pepper to taste


Instructions

  1. Wash and peel the red potatoes, then cut them into chunks.
  2. Place the potatoes in a pot of cold water, bring to a boil, and cook until tender.
  3. In a separate pan, sauté the green onions and kale or cabbage in butter until tender.
  4. Drain the potatoes and mash them with milk, salt, and pepper.
  5. Mix in the sautéed greens and serve warm.
