Description

Ingredients

- 2 pounds red potatoes
- 1 cup chopped green onions
- 1 cup chopped kale or cabbage
- 1/2 cup milk
- 4 tablespoons butter
- salt to taste
- black pepper to taste
Instructions
- Wash and peel the red potatoes, then cut them into chunks.
- Place the potatoes in a pot of cold water, bring to a boil, and cook until tender.
- In a separate pan, sauté the green onions and kale or cabbage in butter until tender.
- Drain the potatoes and mash them with milk, salt, and pepper.
- Mix in the sautéed greens and serve warm.

- For a twist, add some cooked bacon or cheese.
