Description

A delightful blend of sweet caramelized onions and creamy goat cheese, baked in a flaky pastry crust.


Ingredients

  • 1 sheet puff pastry
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 1 teaspoon sugar
  • 4 ounces goat cheese, crumbled
  • 1 tablespoon fresh thyme leaves
  • 1 egg, beaten
  • Salt and Pepper to taste


Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large skillet, heat the olive oil over medium heat and add the onions.
  3. Cook the onions for about 20 minutes, stirring occasionally, until they are caramelized.
  4. Add the sugar, salt, and pepper to the onions and cook for another 5 minutes.
  5. Roll out the puff pastry on a baking sheet and score a border around the edge.
  6. Spread the caramelized onions over the pastry, leaving the border clear.
  7. Sprinkle the goat cheese and thyme over the onions.
  8. Brush the border with the beaten egg.
  9. Bake for 25-30 minutes or until the pastry is golden and flaky.
