- 1 sheet puff pastry
- 2 large onions, thinly sliced
- 2 tablespoons olive oil
- 1 teaspoon sugar
- 4 ounces goat cheese, crumbled
- 1 tablespoon fresh thyme leaves
- 1 egg, beaten
- Salt and Pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large skillet, heat the olive oil over medium heat and add the onions.
- Cook the onions for about 20 minutes, stirring occasionally, until they are caramelized.
- Add the sugar, salt, and pepper to the onions and cook for another 5 minutes.
- Roll out the puff pastry on a baking sheet and score a border around the edge.
- Spread the caramelized onions over the pastry, leaving the border clear.
- Sprinkle the goat cheese and thyme over the onions.
- Brush the border with the beaten egg.
- Bake for 25-30 minutes or until the pastry is golden and flaky.
