- 2 medium zucchini, chopped
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup diced tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, and sauté until translucent.
- Add chopped zucchini and cook for about 5 minutes.
- Stir in diced tomatoes, oregano, salt and pepper.
- Simmer for 15 minutes until zucchini is tender.
- Blend the sauce until smooth. Serve hot.
