Description

Delicious Italian peach cookies filled with sweet fruit preserves, perfect for any occasion.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup powdered sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 1 cup peach preserves
  • 1 cup yellow food coloring


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together butter and powdered sugar until smooth.
  3. Add in the egg and vanilla extract and mix well.
  4. In another bowl, whisk together flour, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet mixture until combined.
  6. Shape dough into small balls and make a thumbprint in each.
  7. Fill each thumbprint with peach preserves.
  8. Bake for 15-20 minutes or until lightly golden.
  9. Once cooled, color the tops with yellow food coloring for a peachy look.
