Description

A traditional Jordanian dish featuring tender lamb cooked in a rich and creamy yogurt sauce. Perfectly spiced and full of flavor, this dish is a staple in Jordanian cuisine.


Ingredients

  • 2 pounds lamb shoulder, cut into chunks
  • 1 cup plain yogurt
  • 1 onion, finely chopped
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 1 teaspoon ground coriander
  • 1 teaspoon turmeric
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • Salt to taste
  • 1 cup water


Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions and sauté until translucent.
  2. Add garlic and sauté for another minute.
  3. Add lamb chunks and brown on all sides.
  4. Sprinkle with cumin, coriander, turmeric, black pepper, and salt. Stir to coat the lamb.
  5. Add water and bring to a boil. Reduce heat, cover, and simmer for about 1.5 hours, or until the lamb is tender.
  6. Stir in yogurt and cook for an additional 10 minutes, stirring gently to avoid curdling.
  7. Serve hot with rice or bread.
