Ingredients

  • 1 cup almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup erythritol sweetener
  • 1/4 cup melted coconut oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup sugar-free chocolate chips


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, cocoa powder, erythritol, and salt.
  3. Add the melted coconut oil, eggs, and vanilla extract to the dry ingredients, and mix until smooth.
  4. Fold in the sugar-free chocolate chips.
  5. Pour the batter into a greased 8×8 inch baking pan.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Let cool, then scoop out small balls and roll into truffles.
  8. Chill in the refrigerator for at least 30 minutes before serving.
