- 1/2 cup unsweetened cocoa powder
- 1/4 cup erythritol sweetener
- 1/4 cup melted coconut oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
- 1/4 cup sugar-free chocolate chips
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine almond flour, cocoa powder, erythritol, and salt.
- Add the melted coconut oil, eggs, and vanilla extract to the dry ingredients, and mix until smooth.
- Fold in the sugar-free chocolate chips.
- Pour the batter into a greased 8×8 inch baking pan.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Let cool, then scoop out small balls and roll into truffles.
- Chill in the refrigerator for at least 30 minutes before serving.
